Method
- Line an 8×8 baking pan with waxed paper or foil and lightly grease.
- Melt butter in a large saucepan over medium heat.
- Add marshmallows and stir until fully melted; remove from heat and stir in vanilla if using.
- Fold in rice cereal until evenly coated.
- Press mixture firmly into prepared pan using an oiled spatula (do not over-compress).
- Let cool for about 1 hour, then slice into 9 bars and serve.
