  • 6 tablespoons butter salted
  • 6 cups mini marshmallows
  • ½ teaspoon vanilla extract optional
  • 4 cups crispy rice cereal

  • Waxed paper or spatula for pressing

Method
 

  1. Line an 8×8 baking pan with waxed paper or foil and lightly grease.
  2. Melt butter in a large saucepan over medium heat.
  3. Add marshmallows and stir until fully melted; remove from heat and stir in vanilla if using.
  4. Fold in rice cereal until evenly coated.
  5. Press mixture firmly into prepared pan using an oiled spatula (do not over-compress).
  6. Let cool for about 1 hour, then slice into 9 bars and serve.
