Ingredients
  

  • 2 lbs ground beef
  • 1 small onion finely chopped
  • 1 green bell pepper finely chopped
  • 1 cup Ritz crackers crushed
  • 2 large eggs
  • ½ cup milk
  • 1 ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup ketchup for meatloaf mixture
  • ½ cup ketchup for topping
  • 2 tbsp brown sugar for topping
  • 1 tsp mustard for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  2. In a large mixing bowl, combine ground beef, onion, bell pepper, crushed Ritz crackers, eggs, milk, salt, pepper, and ½ cup ketchup. Mix until just combined—do not overmix.
  3. Transfer the mixture into the prepared loaf pan and shape evenly.
  4. In a small bowl, whisk together ½ cup ketchup, brown sugar, and mustard. Spread this glaze evenly over the top of the meatloaf.
  5. Bake uncovered for 55–60 minutes, or until internal temperature reaches 160°F (71°C).
  6. Let rest for 10 minutes before slicing and serving.
