Ingredients
  

  • 1 lb boneless skinless chicken breasts or cutlets
  • 2 tbsp olive oil or butter
  • 1 clove garlic minced
  • 1 can 14.5 oz fire-roasted diced tomatoes (optional for extra flavor)
  • ½ cup heavy cream or cream-based cheese like Boursin or cream cheese
  • 2 cups fresh spinach leaves
  • ¼ cup grated Parmesan or crumbled feta optional for garnish
  • Salt pepper, and Italian seasoning to taste

  • Skillet or sauté pan (one-pan style)
  • Baking dish (for baked Tuscan versions)
  • Knife & cutting board
  • Mixing spoon or spatula

Method
 

  1. Sear chicken — Season and cook chicken in skillet with oil until cooked through (~3–5 min per side)
  2. Sauté aromatics — In the same pan, cook garlic (and onions, sun-dried tomatoes if using) for 1–2 minutes
  3. Make creamy sauce — Add cream (or soft cheese) and broth or wine; stir until melted and smooth
  4. Add spinach — Stir in spinach until wilted and sauce thickens slightly
  5. Return chicken & serve — Nestle chicken back into sauce, warm through, garnish with cheese or herbs, and serve (over pasta, rice, or enjoy low-carb)
